Really for the most of us it comes down to math. What rules hurt us the most and which help us the most. With that said all you need to do is a little research on 'blackjack rule variations.' From this you can see the WORST rules AGAINST the player: Lose on ties (17-21), Dealer Bust 22 is push (which is in most blackjack 'variations' such as switch/free bet), blackjack not paying 3:2, etc, etc.
The BEST rules (from promotions, etc) being: Blackjack pays 2-1, 5 card charlies, suited blackjacks paying more, 21 points automatic winner, etc.
Now, if you're going to ask people on these forums what they look for... Most of us just make sure there's standard rules (blackjack 3:2 and anything else is bonus)... But after that card counters look for PENETRATION. That is, how many cards get dealt before the 'cut card' comes out and stops the shoe. There's a lot more things that aren't math and on that list, but they're for counters and advantage players to look for. If you're just playing basic and want to play a good game, the list above will help you identify what a good game is.
Also, you can take the rules for ANY game and plug them in to a blackjack house edge calculator and it'll tell you the house edge. Anything under .5% is at least a 'decent' game of blackjack to play, as far as the basic strategy player is concerned.
